Farm Fresh Chicken vs Duck Eggs

Love eggs? From breakfast to desserts, eggs can be the star of the show or the supporting act.  We know about  the versatility of chicken eggs, but what about duck eggs?

There are a few differences:
  • Size.  Duck eggs are larger then chicken eggs with varying   coloration.  But the most important factor to size is a larger , richer yolk in duck eggs. This means that there is more fat content in a duck egg vs. a chicken egg.
  • The Shell.  Eggs shells are porous in nature allowing air to pass through the shell, duck eggs have a harder shell...so if your trying to get a nice clean crack...get a few extra eggs to practice with.  Duck eggs will last a little longer then chicken eggs because the density of the shell.

  • Flavor.  For me, duck eggs have a richer flavor then your regular chicken eggs.  This makes them perfect for baking or for a dish that an egg has to stand up to other ingredients. (Duck eggs tend to give your bake goods better structure and richness....)
  • Cooking.  No matter if your frying, baking, scrambling or poaching your eggs, don't over cook them.  Duck eggs especially tend get to rubbery...and well, that's not how we treat delicious fresh food.
I would recommend buying farm fresh eggs, whether duck or chicken.  You can't beat the freshness of the farm.
