Ireland is one of my favorite places in the world, but in the County Kerry is Dingle on the Dingle peninsula and it is truly amazing. A rugged but beautiful landscape giving way to an area rich in history and tradition.

Dingle is also a hot spot for fishing, making the area known for its restaurants. One of my favorite dishes on the road here is fish chowder. A pint of Guinness and brown bread is all you need with this delicately cooked chowder to keep your trip going. Generous pieces of cod, haddock, mussels with tender potatoes slowly brought to perfection in a comforting bacon cream base .... I am hungry now.
